Taking a Deep Breath and Getting Through the Process

In every circumstance, there is a lesson. Still deciding what I am taking from this one 🙂 Friday morning when we showed up for our 9 am appointment to have our windshield replaced we expected to be out within 4-5 hours; 2 hours to install and 2 hours to cure.  At 10:15 we were told the glass people were stuck in traffic.  At 12:15 we checked to see how the installation was going and were told not only had they not started, but the glass people were not due until 2ish.  Which meant we would be out at the earliest at 5 or 6 if they were on time.  So we called Wekiva Falls to see if we could get a reservation to stay there again since it would be too late to go anywhere else. So another day not on the road.  Since it as going to be at least 5 more hours, we asked the dealer to provide us with a rental car.  They agreed and had some one drop us off at Alamo Rental Service at the Sanford Airport.

We decided to take advantage of the time to shop for things we needed for the RV, like a crock pot, dishtowels, can opener etc.  We checked in with the dealer at 4:30 and the glass people had just gotten there – good thing we had not just sat around.  They had arranged for us to stay at the hotel where we spend our first night and reimbursed us for dinner.  Unfortunately everything we needed for the hotel was in the rig. So we bought new toothbrushes again and walked into the hotel carrying a target bag for luggage.  Pretty classy, right?

Yesterday morning, we shopped some more and then went back to the dealer and finally got on the road.  We decided since we had been so stressed to take our reservation at Wekiva we had to cancel from Friday night to Saturday night and even got the same spot.   We were free of the dealer and checked in about 2 pm.  Got everything unpacked and still trying to decide where to put everything.  There was a knock at our door and I immediately thought we were doing something wrong.  Instead it was our 1st visitor Dennis, who winters here and came by to say hello.  How fun was that?  He heard about us from the man who drove us to return our rental car who also winters here. Dennis who has owned 11 RV’s told us many great stories.  He also works part time at the dealer and had moved our rig while there several times.  Dennis says everyone calls him the mayor of Wekiva Falls and I secretly named him Dennis the Menace since he seems like quite and imp.  He and Kevin got discussing their love of doughnuts and a couple hours later he showed back up with a square doughnut for Kevin.

We made our 1st dinner in the rig, Kevin’s Mexican Bean Bowl.  One of our shopping purchases was a 4 quart All-Clad Soup Pot and we christened it.  Since so many of you asked, here is the recipe:

1 onion sauteed in water or veg broth

1 Tablespoon minced garlic

28 ounce can of diced tomatoes

2 small cans of Ortega Green Chiles

Tabasco

4 cans of beans (we used last night 2 black beans, 1 pinto beans and 1 kidney beans

Saute the onion and garlic.  Add the tomato’s and chilies.  Add the beans and Tabasco.  Cook on medium for about 20 minutes.  We added Tapatio on top when eating.  At home we usually add 1/4 avocado.

Dennis stopped by shortly after we got home from our walk with fresh doughnuts.  He gets them at local Harley Store where every Sunday they offer free coffee and doughnuts.  He did however spend $40 on Harley parts 🙂  No such thing as free doughnuts 🙂
